Eating for Pennies, Hawaiian Stir Fried Chicken


Hawaiian Stir Fried Chicken is delicious and full of healthy ingredients. It also stores and freezes for easy make ahead meal prep.


Ingredients:


  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup pea pods, ends trimmed
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup sliced water chestnuts
  • 2 tablespoons soy sauce
  • 2 tablespoons pineapple juice (reserved from the canned pineapple, if using)
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving


Now, let's get started with the recipe:


In a small bowl, combine soy sauce, pineapple juice, oyster sauce (if using), cornstarch, salt, and pepper. Mix well and set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add minced garlic to the hot oil and sauté for about 30 seconds until fragrant.

Add the sliced chicken to the skillet and stir-fry for 5-7 minutes until cooked through and slightly browned. Remove the chicken from the skillet and set it aside.

In the same skillet, add the sliced bell peppers, pea pods, pineapple chunks, and water chestnuts. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

Return the cooked chicken to the skillet with the vegetables and stir to combine.

Give the soy sauce mixture a quick stir and pour it into the skillet. Cook for an additional 1-2 minutes until the sauce thickens and coats the chicken and vegetables evenly.

Taste and adjust the seasoning with salt and pepper if needed.

Remove from heat and serve the stir-fry over cooked rice or noodles.

Options?


Want a few options?  Cook mushrooms separately and mix in at the last moment or add Broccoli.  Both have a strong cooking flavor so should be cooked individually and mixed in.  

Alternatively you can bake the chicken pieces on the pineapple in a roasting pan and coat with sauce adding the vegetables for the last 20 min.
